Raw Materials

Arabica Variety

Arabica coffee obtained from the beans of the Coffea Arabica plant, an exotic species. Its discovery dates back to the 6th century in Abyssinia, present-day Ethiopia, one of the few regions where coffee was known and appreciated at the time. The plant was named 'Arabica' due to its historical connection with the Arab region.

Characteristics of Arabica Coffee
  • Aroma: Rich, fragrant, and aromatic, with delicate fruity notes
  • Bean: Stretched, smooth, regular, with yellow-green tones
  • Plant: The Coffea Arabica can reach a height between 8 and 10 meters and has smaller leaves compared to Robusta
  • Cultivation: It grows between 600 and 2000 meters in altitude, in areas with temperate or tropical climates.

Thanks to its unique characteristics, Arabica coffee is one of the most appreciated in the world.

Robusta Variety

Robusta coffee is obtained from the beans of the Coffea Canephora plant. This type of coffee is native to West and Central Africa and is particularly appreciated for its strong taste and higher caffeine content compared to Arabica. The name 'Robusta' comes from the plant's resistance to severe climatic conditions and parasites, a characteristic that makes it easier to cultivate.

Characteristics of Robusta Coffee
  • Aroma: Intense, strong, and earthy, with notes reminiscent of wood and cocoa.
  • Bean: More rounded in shape compared to Arabica, with a brown-green color and a less smooth surface.
  • Plant: The Coffea Canephora is more robust and resistant; it grows up to 10 meters in height, with large, shiny leaves.
  • Coultivation: Cultivated at lower altitudes, up to about 800 meters, in hot and humid tropical climates.

Thanks to its bold flavor and higher caffeine content, Robusta coffee is ideal for blends aimed at those seeking a strong and full-bodied espresso.

Production Process

From the Fruit to the Bean

Each coffee bean is born inside a ripe cherry. After harvesting, the beans are extracted through two main methods:
  • Washed method: The pulp is removed, and the beans are soaked in water for 24-48 hours, resulting in 'clean' beans with a more refined flavor.
  • Natural method: The cherries are sun-dried for about 20 days, producing 'unwashed' beans with a fuller aromatic profile.

After drying, the beans are hulled to remove the parchment and polished to ensure their purity. Finally, a strict quality control selects the best beans, ready to be roasted, ground, and packaged, ensuring a coffee with flawless taste and aroma.

We use the best roaster in the industry, one of only three in Italy, which guarantees an extremely precise and controlled process, maximizing the aromas and fragrances of the coffee.

Grinding is essential to preserve freshness and ensure a balanced coffee flavor. After a perfect roast, the beans are quickly ground and packaged, sealed in a safe atmosphere to maintain the aromas and flavors intact. Thanks to the experience of our specialists, each blend is precisely calibrated to offer a unique experience in every cup.
